Lansky recommends using the following grinding angles:
17° angle razors, razors, scalpels
20° angle commonly used angle for blades made of high quality materials, especially kitchen blades
25° angle recommended for most outdoor knives, hunting knives.. Ideal compromise between sharpness and dullness of the blade
30° angle for cardboard knives, carpet knives and other applications where rapid wear occurs

Instructions for Use:
The perfect accessory for your Lansky sharpening system. This 2000 grit ceramic polisher allows you to achieve a factory-perfect finish on an already sharpened knife, easily down to a mirror-like edge. We use this sharpener last, for the final finishing touch. Use the appropriate Lansky honing oil.
