This series is made by a special hardening technique called "松炭焼 MATSU-ZUMI-YAKI".
MATSU-ZUMI, pine charcoal, is an excellent fuel for smelting metals because it holds well and maximizes heating power.
This hardening technique prevents decarburization, resulting in kitchen knives that are harder than usual.
Therefore, the blade material of this knife is "SHIRO #2", but the hardness corresponds to "Blue steel #2".
