A long, dexterous Japanese knife with very high quality steel. This type of san mai blade, sandwich construction from a cutting core of ultra-hard carbon steel Takefu-Shiro 2 is surrounded on both sides by SUS410 stainless steel. This design then combines high sharpness and long-lasting ease of cutting with practical corrosion resistance. The lightweight, dexterous design of the utility knife is suitable for cutting meats, vegetables, fruit, pastries or general easy food preparation. The thin, very sharp blade cuts cleanly and deftly and cuts food with unprecedented ease and speed.
